This is how the recipes says, is it okay?

I’m cooking a chicken supper from a recipe from “The Best of Bridges” cookbook.

I’m making the Polynesian Chicken.

I was to marinate the chicken in a soy sauce marinate for an hour, which I placed in the fridge during that time. Then I was to brown the chicken chunks. The recipe called for me to add pineapple and mandarin orange juice to the soy sauce marinate, then add that combination to the chicken and put it in the oven for 45 minutes at 350 to cook.

Now, after doing it all, I’m having reservations about it. I have never before used the the leftover juices that contained raw chicken to reuse to cook the supper in.

Is this safe? I’m assuming sense this cookbook is a worldwide best seller that it’s fine, but I just want some second opinions of the YA community on this one.

It’s fine as long as the sauce is cooked with the chicken. It is no more or less contaminated and unsafe than the chicken itself, and it will all be cooked together so it will be fine.

Never use a marinate that has not been cooked as a sauce for cooked meat.
